An “odourless, colourless and tasteless” emulsifier made from acacia trees is now available in the UK.

Acacia gum is highly soluble and carries a low calorific value, according to supplier Alland & Robert.

Recognised as a fibre, it is an eco-friendly, clean-label ingredient, the company said.

Oil-in-water emulsions

The gum is used in beverages for difficult oil-in-water emulsions, and for the stabilisation of complex oil emulsions, such as products with citrus fruit, paprika, and beta-carotene.

It reduces the surface tension between the dispersed and continuous phases of an emulsion, Alland & Robert added.
