A clean-label starch that is said to combine instant viscosity with higher texture stability over the shelf-life of a product has been launched by Ingredion.

The moderate process tolerance of the Novation Prima 650 starch enables producers to keep low shear and temperature processing conditions.

Improve texture stability

It can improve the texture stability of the end product between 25% to 40% over its shelf-life, Ingredion claimed.

Made from waxy maize, the instant starch is suitable for fruit preparations, quiches, instant fillings, cheesecakes, muffins and mayonnaise.

No pre-mixing required

With no pre-mixing required, manufacturers can also remove a step from their production process to reduce costs and simplify the procedure.

As it is gluten-free, Prima 650 can be listed simply as ‘starch’ or ‘maize starch’.

Janin Zippel, product manager for wholesome at Ingredion, said: “The starch ticks all the boxes – allowing foods to keep their all-important creamy mouthfeel and glossy appearance for longer.”
