Cake toppings: Vana-Monte DP570 is said to enable lasting firmness

A whipping agent suitable for warmer temperatures is now on the market from Dutch firm FrieslandCampina Kievit.

Vana-Monte DP570 provides aerated and lasting firmness that is particularly suited to temperatures where cake fillings and toppings tend to collapse, the ingredients maker said.

The agent is suitable for both professional bakery and retail applications, and it offers “outstanding performance” in chantilly cream and cake fillings in particular, FrieslandCampina Kievit added.

“The firmness Vana-Monte DP570 provides helps to create and maintain beautiful forms and shapes, adding to a moment of indulgence for the consumer,” said Gea de Groot, the firm’s global product group manager for food ingredients.
