Finishing the marzipan is an intricate business, done by hand.
“Rather than having long lines of kit with marzipan going in at one end and finished products coming out the other, we make our marzipan in a very traditional way,” Astill said.
“Our miniature marzipan Christmas puddings, for example, have three elements – a marzipan ball with raisins, sugar icing holly leaves, and a sugar icing berry. The three elements are assembled together, before being toasted.”
